We have drawn lines between different techniques of art expression and cooking techniques, from layering to burning, we treat ingredients as artistic materials.

SILKSCREEN

Kalamata olive, spinach and feta terrine, peppermint, oregano and lemon tiropita, charred bell pepper gel.

TEXTILE

Potato, daikon, avocado salad with peanuts. Lettuce soup and sake, mirin pickled cucumber, chili oil.

SCULPTURE

Sous vide celeriac and sesame, with cauliflower and almond puree, rice vinegar pickled white onion pickled, green grapes.

Paired with Pinot Blanc, Voltumna, Toscana.

CHARCOAL

Black tahini purple cauliflower with smoked almond puree, ash and celeriac skins. Burnt onion powder, burnt onion petals, purple grapes.

Paired with French Kiss Beaujolais Nouveau, Domaine Saint Cyr, France.

Rhubarb and sherry eton mess with strawberry meringue and black pepper cream.
